Sensuous Soup Recipies – Part 2
This post is part 2 of “Sensuous Soups on a Shoestring” by contributing author: Christine Phoenix Green. Click here to read Part 1.
To create a Sensuous Soup, there has to be an Intentionality to deliberately create something DELICIOUS FOR A PARTICULAR PURPOSE. When I cook a soup, I always have an Intentionality before I start. In other words, what is my intention or purpose here?
Sometimes it is to celebrate the gifts of the Earth by eating seasonally. It must be sensuous and enhance the particular flavour of one or more of the season’s signature ingredients. In other words, this might mean delightful trips to your local farmer’s market if you don’t have your own garden, to gather, honor, celebrate and cook your way through the wheel of the year, each period with it’s own energy and spirit. In this way, we are in tune with Nature’s rhythms, which physically, psychologically and spiritually of which we are a part.
Sometimes it is for what I call a magical or spiritual purpose, using certain vegetables or ingredients for energetic purposes when a person is unbalanced. Say someone is in an uncomfortable state when they have been working intensely hard and tend to be tight and fixated… I would not serve them a bulky, protein-dense soup packed with meat and root vegetables that tend to an even more tightly focused energy state. In that case, a nice light soup of spring greens and light vegetables in broth can energetically lighten up the personality.
On the other hand, if you have a person in a really spacey state who cannot focus, concentrate and follow through on tasks, a serious “grounding” soup using root vegetables, beans and meat will pull their energetic state closer to the earth to get something done! But the soup, whichever one, needs to be sensuous and delicious and not taste like mud!
Sometimes the intention is a healing soup, and you have to be conscious particularly when creating a healing soup… (example: a friend with a vicious viral sore throat, was in great pain when I unthinkingly brought her a soup with tomatoes (acidic), and chewy spelt (too rough on inflamed and tender tissue). Oops!…better a soothing chicken soup broth with herbs and rice reduced to a gruel!
Another thing about a healing soup is that it needs to be inviting and palatable when one does not feel well…so it should be both simple and SIMPLY delicious, and not tasting like medicine. Whatever healing herbs are included in it should be chosen well for a purpose… a soup made of 10 unusual flavored medicinal herbs and a multitude of ingredients, each of which target some particular problem in the name of health is NOT palatable or inviting to anyone, especially when you are sick and life has lost it’s luster.
A healing soup, which includes the addition of two of my favorite mild-flavoured (tho powerful) healing herbs, astragalus and Siberian Ginseng, will gently assist the immune system, response, restore your natural energy, and soothe digestion. These healing soups, and all soups actually, also need the creative use of culinary herbs such as basil, bay, rosemary, dill, thyme, marjoram, lemon or orange peel as well as garlic, onion and a discerning hand with cayenne pepper for warming.
Sometimes the intention is to create a big warm pot of Soulful Comfort and Nourishment. In this case a wonderful mix of herb enhanced broth, vitamin-enriched vegetables, a chewy grain such as barley, spelt or rice, and beans or meat will totally satisfy all and any kind of hunger of the body, the sadness of the heart or weariness of the spirit. This kind of soup is a total meal, needing only a light salad perhaps, and for sure, a guilt-free dessert of choice to end the meal! Once eaten or shared, we are sustained and hope is restored!
After you have created your sensuous soup, be attuned, as you enjoy your own artistry, to the environment of your relationships, for surely, there WILL be someone in your Community who will need a bowl of Comfort and Compassion…and both yourself and the Other will be blessed in the sharing… In truth, soup itself IS Community in a Pot.
FOUR SENSUOUS SOUPS ON A SHOESTRING w/ 4 INTENTIONS
Recipies:
Healing Soup: Chicken Soup with Astragalus and Siberian Ginseng (eleutherococcus)
Ingredients:
- 1 Leftover rotisserie Chicken, bones in chicken with meat, boiled in chicken broth (below) strained, meat separated and set aside. Reserve cooking broth.
- 1 qt plus 1-2 cans (14.5oz) can chicken broth
- 1-2 stalks of celery chopped
- 2 carrots and 2 parsnips chopped
- 1 med onion chopped
- 2-3 cloves garlic chopped
- ¼ lemon, squeezed or dash of Real Lemon (go easy)
- ½ bunch fresh basil torn up and/or dash of dried asil
- sweet marjoram to taste, salt and pepper to taste
- 1 cup of decoction (simmered tea) of 6-8 small slices of astragalus root
- ¼ -1/2 cup dried siberian ginseng (local herb or natural food store)
Simmer astragalus and siberian ginseng for 20 minutes in water. Strain. Set aside. Saute celery, carrots, parsnips, onion and garlic in a little butter or vegetable oil until slightly softened. Add reserved chicken broth and a little extra to make original amount. Cook until vegetables are tender. While cooking, add lemon juice, and dried culinary herbs, salt and pepper to taste. Add decoction of astragalus and siberian ginseng. Add reserved chicken. Serve with cooked WHITE rice, prepared separately. (White rice is not as nutritious as whole grain rice, but easier on digestion after illness). If the person is very cold while ill or recuperating, without a sore throat or digestive tract irritation, a dash of cayenne upon serving will be very warming, and “cleansing of the blood.”

Energetic/Magic Soup for Grounding (or showing off):
Pink and Ruby Red Borcht (elegant root soup)
Ingredients:
- 1 bunch beets
- 1 large onion, quartered
- 1-2 stalks celery chopped
- 1 bay leaf
- Water to cover or water mixed with 1-2 14 oz cans of low sodium beef broth
- Dried dill to taste, salt and pepper to taste
- *Sour Salt (optional). This is pure ascorbic acid crystals found in vitamin section, canning section or specialty stores in the Jewish foods section
- Sour cream
- Boiled potatoes, separate
Chop beets into thick matchsticks. Cover with water/broth. Add onions, celery, salt, pepper and bay leaf. Carefully add dash of sour salt for a mild sour flavour to taste. Cook until beats are tender. When cooked take ½ cup aside and mix with sour cream, add back to soup…repeat several times until soup is pink as you desire. When serving hot with potatoes on the side or mixed in, this soup is grounding. It can be also eaten cold, and in that instance, the soup’s enegetic state is more “spacey”.

Seasonal Celebrations Soup: Spring Pea Soup with Tarragon and Hint of Honey Ham
Ingredients
- 4 tablespoons butter.
- 1 onion, coarsley chopped
- 2 large cloves garlic, chopped
- 4-5 cups chicken broth
- 1 large Idaho or chef’s potato, peeled and chopped
- 2 boxes frozen peas
- ¼ teasp cayenne pepper
- salt and pepper to taste
- 1-2 tablespoons dried tarragon
- 2-3 oz honey ham (deli) diced
Saute onion and garlic in butter until wilted. Add broth and potato, bring to a boil, lower and cook until potato is just tender. Add peas (slightly unfrozen), salt and pepper until peas are cooked. Add more broth or a little water if necessary. Stir in tarragon. Let cook. Blend smooth-ish with immersion blender or food processor. Add diced ham. (can add a touch of sherry when cooking also).

Ultra Comfort Soup: Zuppa with Farroor Barley and Spinach (or arugula, basil, mixed spring greens chopped fine)
Ingredients:
- olive oil for sauteing
- 1 med. onion chopped, 2-3 cloves garlic chopped
- 2 med carrots chopped
- 1 stalk celery chopped
- 4-6 mushrooms quartered (can add chopped zucchini or summer squash)
- 2 cups canned tomatoes, chopped with juices
- 4-6 cups low sodium chicken broth
- ¾ cup of farrow (I use ONLY grain from Rustichella D’Abruzzo in Italy because it cooks up quick. Can be ordered from: www.markethallfoods.com (Use barley as a quick cooking substitute)
- 4 cups loosely packed chopped greens of choice or 1 frozen package
- chopped spinach.
- Salt/pepper to taste
- Squeeze of lemon to taste, dried parsley, marjoram, basil to taste
- Freshly grated parmesan to sprinkle on soup in the dish if desired
Saute onion, garlic,carrots, celery in olive oil to sweat out juices. Add chopped canned tomoatoes and broth. Add dried herbs and stir in ¾ cup of farro or barley. Simmer until grains are soft, but chewy. Squeeze in dash of lemon juice, adjust herbs and salt. Add greens, simmer until soft. Serve hot, sprinkle with cheese if desired. No bread needed. Finish with a nice comfey guilt-free but naughty dessert, or fruit and cheese.
